Billaud-Simon has plots within the three sectors of Montée de Tonnerre, with the oldest plots in the Pied d'Aloup climat which reach 87 years old. “Mostly made in stainless steel, rounded out with a few barrels. Paler in colour than the Petit Chablis with a fresh, quite lean, quite marine nose. Fresh grapes with a saltier finish, medium bodied yet with good length. Quite a stylish and classic Chablis. Drink from 2024- 2027. 87-89” Jasper Morris, MW
