Tasting Notes
Grown on a south facing slope, the fruit is hand picked lightly crushed, and basket pressed. The heaviest solids are briefly settled out by gravity, then the juice transferred to barriques awaiting the start of fermentation. This occurs naturally, when it is ready, and takes as long as it takes.
Toasty, nutty, and faintly smoky aromas. Crisp fruity grip of melon honey caramel brioche and lemon on the palate with a light oak and well balanced finish.
This year’s chardonnay was picked across a seven day period in early March, offering a full flavour profile from the vineyard's lean granitic soil. The fruit was immaculate - fully ripe with ideal natural acidity.
The juice fermented in a mixture of 600 litre demi-muids and 228 litre barriques. As usual, the new oak component is around 25%.
This release shows greater intensity than previous years and an approachable palate, due to the combination of a lighter crop and extended ripening.
