Tasting Notes

The son of a family of farmers from the Val de Loire region. Yannick's family where already producing crops as far back as the 1960's. Even back then they used old school methods and yields low but quality of fruit foremost. Growing up in this environment Yannick developed a very strong natural interest and knowledge of the tastes and aromas of quality wine. It seemed that his future was set to be a winemaker. After completing studies in agriculture and oenology, he moved to the town of Chablis in 1984. Very quickly he was given major responsibilities and for 27 years, was in charge of producing high-quality grapes for one of the finest vineyards in the Chablis Region. Yannick began to bottle his own wine for the first time in 2018 from his own vineyard.

Manual harvesting which Yannick understands provides greater purity, precision and finesse to the wine. Handling during vinification is limited to what is strictly necessary so as to preserve the finesse of the Chardonnay grapes.
