Ayala, based in Aÿ in the heart of Champagne, has been transformed since Bollinger bought it in 2005 and this non-vintage proves it. This is a balanced blend of 40% Chardonnay, 40% Pinot Noir and 20% Pinot Meunier. The result is crisp while not too dry, and therefore drinkable as an apéritif. Apple and bright citrus combine with green plums to give a fruity wine that is also structured. The cellarmaster continues to reduce the dosage (sugar) so there is a crisp, tight aftertaste.
Ayala Brut Majeur is the result of the blending of a particular harvest with quality reserve wines. A˜ being the capital of Pinot Noir (40%), this noble grape is always central thus ensuring the vinosity, the fullness and the intensity of the wine. Chardonnay (40%)gives elegance, liveliness and finesse, and Pinot Meunier (20%) adds a delicate fresh and fruity note.
Brut Majeur is representative of the Ayala house style and they have again found a worthy ambassador in this wine, A house style with subtle balance between roundness, elegance and vivacity. It has a vigorous bead of fine bubbles and light golden hue, its expressive nose awaits as you first introduce it to your mouth with a balanced and precise mouth feel lingering long after each sip.
The low dosage, 7 grams per litre, reveals the delicate nuances of the aromas and the bouquet.
Ayala Brut Majeur is ideal served as an aperitif, however its vinosity and its personality make it also a wonderful accompaniment throughout a meal.
