Champagne Drappier Blanc de Blancs NV

As its name indicates, this white Champagne is made exclusively from white grapes, in point of fact from Chardonnay. Nevertheless, an original feature of the Drappier House, a splash of Pinot Blanc, called “Blanc Vrai” in Champagne, is sometimes added to the cuvée in order to increase its complexity and roundness.

The nose brings to mind white peach and pear but also more floral notes such as peony. On the palate a mineral Champagne, lightly biscuity, creamy, supple, seductive.

At the table it goes superbly with white meat, chilled smoked salmon with citrus fruits, tagliatelle with scallops.
