Tasting Notes

A quintessential Yarra Valley Chardonnay, crafted in the signature Timo Mayer style—pure, precise, and unembellished.

This wine is fermented and aged for six months in old hogsheads before being transferred to stainless steel, prioritizing freshness and clarity. With no malolactic fermentation or lees stirring, it showcases pristine citrus flavors, a delicate mineral backbone, and a subtle texture from its time in barrel.

The 2024 vintage introduces a touch more richness in the mid-palate, yet the wine retains its sharp, focused character. Vibrant notes of grapefruit, lemon zest, and a salty edge keep it fresh and dynamic.

It’s streamlined, exacting, and made to mature—though resisting the first bottle will certainly be a challenge.

"Here come the hot stepper. Quite the intense and rich flavour profile here, though with good cut and thrust alongside. Magic of Mayer. Scents and flavours of lemon curd, grapefruit, red apple juice, green mango, a touch of green almond and a big squeeze of lime. Dashes of sea spray and ginger here too. You could say generally there’s lots on here. A suggestion of parmesan cheese funk in the mix too. Slippery texture, some chalkiness to finish. Lots of great concentration and the palate staining length is impressive. A full on style done fully well."
