"An attractive aroma of cedarwood, kirsch, oakmoss, and warming spice on the nose. The palate is restrained with subtle notes of poached strawberry, dark cherry, earth and allspice continue. Understated tannin, bright acidity and incredibly finessed." - Pooley
100% whole bunch fermentation (wild) for 20 days. Pressed to 50% new French oak barriques (50% Cavin / 50% St. Martin, both medium toast, tight-grained) for 14 months. Pommard Clone. Yield: 6.0 tonnes/Hectare
