94 / 100"A selection of a few barrels. Matured in barrel and on lees in bottle. An enticingly medium-bodied Barossa sparkling shiraz, graced with white pepper and beetroot over a core of satsuma plum skin, blackberries and morello cherries. A fine acid line marries with a stream of fine-grained tannins through a long, elegant finish. Such intricate engineering will confidently see it out for the next decade, but it's a delight from the outset."

Tasting Notes
The base wine for our favourite fizz is created from a Solera system with an average age of 3 years. After tirage it spends up to 24 months on lees, adding a true elegance and finer, more persistent bead. Pedro Ximènez is added following disgorgement, imparting a delicate caress of sweetness, making it just that little more delectable and moreish.
Very dark ruby red, super complex aromas of plums, prune, cherry, blueberry tart, panforte and dark chocolate follow onto a full bodied and intensely flavoured palate. It's dense, black, chocolaty and richly flavoured, the smooth, spreading flavour of it very easy to fall for. It tastes of Christmas cake, plums and chocolate, the combination resulting in a big fat ball of dark-coloured fun, Rich yet fresh on the palate, fine with soft tannins and lingering complex flavours.
