Tasting Notes
Ulithorne produces small quantities of red wines from selected parcels of grapes from its estate vineyard in McLaren Vale, planted in 1950 by Bob Whiting. These rare and high-quality wines are crafted to always consider the fruit first – ensuring that the final wine celebrates all that is unique in the flavours and structure of the fruit taste, as it ripens in the vineyard.
The Paternus Shiraz is deeply coloured, it explodes with blackberry, liquorice and tarry fruits with coffee grounds oak. The palate is then bold and dense with lashings of dark fruit which are nicely lifted by spice and earth before a long and strong finish. Impressive and worth keeping some in the cellar to enjoy over the next decade.

"A classy wine. Blewitt Springs sourced. Elevated floral aromas, a lightness of being, gritty sandy tannins and for those seeking heft, plenty of extract and French oak. Matured for 18 months pre-blending then another 6 months after that. Raspberry bon-bon, blueberry, anise, lavender, clove and thyme. A wine that bridles power for the punter with a refined tannic kit, a treat for the experienced imbiber. Long and forceful."
