Tasting Notes
With a blend of native Spanish grape varieties Xarel lo, Macabeo and Parellada, this Cava showcases a fine balance of fruitiness and elegance.
Aged for 24 months in the bottle after spending 4 years on lees. Bright pale golden yellow. Fine and constant bubbles form a persistent crown. Nose evokes white flowers, ripe stone fruits, and tropical notes with a background of fresh herbs, subtly toasted. In the mouth, it is dry, integrated, and creamy. Good structure balancing with character and excellent integration.

It’s made in the traditional way and has a deep and penetrating intensity, a mix of light toffee, and hazelnut with a creamy honeysuckle overlay. It’s crisp with a fine acidity sustaining the long palate. Great with food of substance."

"Cava is a much underappreciated style of sparkler, especially in this country. A blend of Xarel lo, Macabeo and Parellada, this thoroughly enjoyable fizz spends four years on lees and then another couple in the bottle before release. The colour is a gleaming yellow. Well structured, this is quite tight with notes of jasmine, stonefruits, figs, peaches and a real peppermint touch. There are also hints of tropicals. An attractive style which is clean and refreshing, with bright acidity and showing us medium length. This will please a lot of people over the next three to four years."

"The attack is rather reserved for a Cava that has spent 48 months on lees. Then, it unfurls notes of freshly baked bread, bread dough, pan brioche, honey toast, lemon curd, crunchy red apples, and honeysuckle. The mousse is quite delicate, but nevertheless, it elevates that fresh lemon zest-like acidity, uncovering a texture like that of a lemon meringue. It does not have an exaggerated length but is a joy to drink."
