95 / 100"The grapes for this release were sourced from McLaren Vale, Barossa Valley, Coonawarra, Padthaway and Wrattonbully. 15 months in French (24% new) and American (12% new) oak hogsheads. Those unmistakable hits of bay leaf, mint and tobacco. Bin 407 is always so unashamedly cabernet. Blackcurrant sweeps confidently in, along with boysenberry, along with sweet herbs, cloves, green olives and cocoa. I love the finesse of both the tannin and the fruit, the long, effortless draw of the finish. Beautiful wine."

"Dark ruby with purple reflections and faint ochre brightening on the rim. A whole array of intense aromas with eucalyptus, mint, blackberries, cassis and liquorice. Juicy and tightly meshed on the palate, fresh blackberries and ripe supporting tannins. A long finish with chocolate and mineral notes. Already approachable, good development and certain ageing potential."

"As with the St Henri shiraz, with five regions in play here this is all about varietal expression, measured by a mix of warmer to cooler districts. That allows a broad brush of characters to show themselves here in the immediate cabernet aromas and flavours of cassis, dark berries and fruits of the forest that then get a lovely little tickle of mint derived no doubt from the cooler sources in the Limestone Coast zone. Fifteen months in a mix of French and American oak, a minority new, have offered another layer as well, along the lines of cedar and dark chocolate. There’s lots to love here, from the vibrant cabernet fruit profile to the succulent and expressive tannins that are juicy yet supportive, the palate even and beautifully balanced in its final hurrahs. 96 points."

Tasting Notes
The 2020 Penfolds Bin 407 Cabernet Sauvignon is a textbook example of the varietal. It is a blend of grapes from South Australia's Barossa Valley, Coonawarra, and McLaren Vale regions, and it is aged in a combination of French and American oak.
The wine is dark ruby in color with purple reflections. The nose is complex and expressive, with aromas of crème de cassis, blackberries, mulberries, spearmint, toasted cumin, coriander seeds, bay leaf, turmeric, toasted coconut, cedar, and cocoa.
The palate is full-bodied and structured, with flavors of wild black cherries, cola, sarsaparilla, sage leaves fried in nut-brown butter over grilled calves' liver, pistachio terrine, and a fine graphite core. The tannins are seamlessly woven, and the acidity provides a lovely balance.
The wine is surprisingly approachable for its age, but it also has the potential to age beautifully for two to three decades. It is best enjoyed with grilled meats, roasted game, or hearty pasta dishes.
