A rich melange awaits, of complex nuttiness, cashew and almond, with nashi pear, preserved lemon and fig. Tasting Notes

This wine begins its journey with the meticulous handpicking of the fruit, followed by a gentle whole bunch pressing process. The resulting cloudy juice is then delicately transferred into a blend of new and seasoned French oak puncheons and barriques, each vessel contributing its own subtle nuance to the final product.

Spontaneous fermentation ensues, guided by the whims of wild yeast over the course of three weeks, infusing the wine with a tapestry of complex flavors. Following fermentation, the barrels are attentively topped, allowing the wine to gracefully mature in situ for nine months. Careful selection then leads to the perfect amalgamation of barrels before bottling.

The fragrance tantalizes the senses, weaving together notes of luscious white peaches, kissed by honey, and enveloped in the creamy embrace of cashew-like oak. On the palate, a symphony of freshness and expression unfolds, as ripe stone fruits dance harmoniously amidst a backdrop of refined natural acidity. The acidity gracefully tightens and elongates the finish, while subtle whispers of Burgundy oak lend their supportive presence.
