This sparkling wine is a blend of Chardonnay sourced from the Casuarina Vineyard and Pinot Noir from the HVD Vineyard. These dry-grown, old-vine vineyards provide the foundation for a wine of elegance and depth, enhanced by the richness and texture achieved through secondary fermentation.
The grapes were harvested together during the coolness of the night and gently pressed to minimise colour and phenolic extraction. The juice was fermented in stainless steel tanks and left on lees to develop additional complexity. A secondary fermentation, carried out using the Charmat method, added further richness and texture to the wine.
The result is a sparkling wine that is light and refreshing. The nose showcases vibrant citrus and strawberry aromas, complemented by subtle yeasty complexity. On the palate, it is fine and delicate, with the Chardonnay and Pinot Noir blending seamlessly. The richness and depth from the secondary fermentation create a beautifully balanced sparkling wine.
