"Just filtered. Pale in colour and the nose has been slightly stripped. Entirely white fruit, with concentration, perhaps a hint of lemon, the stones and the flesh, but a bit muted. The persistence is there, so this may just be unwilling to declare itself today. Drink from 2027-2032. Tasted: July 2023."

Tasting Notes

Vaillons is one of Chablis' top Premier Crus. It is on the left bank of the Serein River. Ageing is done 1/3 in stainless steel vats, 1/3 in 80 hl oak barrels and 1/3 in Burgundy barrels. They are blended before bottling. Vine age 40 years.

This blend of 5 Vaillons parcels: Épinottes, Minots, Roncières, Châtains, and Vaillons. Pneumatic pressing and cold static settling. Spontaneous alcoholic fermentation in thermoregulated stainless steel tanks.
