Tasting Notes
The grapes were sourced from vineyards which showed the greatest fruit flavours during the growing season. The grapes were harvested in the late of the night and early morning then transported to the winery where they were crushed into static fermenters and inoculated with a selected yeast strain. Open fermented on skins for 7 days with temperature control between 18 to 28 degrees Celsius. Once optimum colour and flavour was extracted the wine was drained and pressed. After malolactic fermentation was complete the wine was racked and filtered into a mixture of oak for maturation.
The wine has a rich, deep red colour tinged with purple. Its bouquet reveals elevated scents of mulberry and blackberry, complemented by subtle notes of plum and oak with cedar undertones. It possesses an intense flavour profile, a delightful texture in the mouth, and impressive longevity.
