Tasting Notes
All our Sparkling wine are made in the traditional French method with secondary fermentation taking place in bottle under control temperatures to give the wines a slow secondary fermentation and development a beautiful smooth mouse of foam.
The 2017 Blanc de Blanc spent 58 months on fermentation lees after tirage and was disgorged in July 2023. This extended time on lees gives the wine a lovely brioche character and good palate richness.
