Tasting Notes
Selected from premium vineyards across the Frankland River, greapes were harvested in the cool morning. They were crushed to fermenters, and chilled then “cold soaked” for 3 days, before fermentation, to allow ripe tannin expression.
With a yeast strain from Burgundy, the wine finished primary fermentation in 10 days, and was then pressed to old and new French oak, and inoculated for malolactic fermentation, then maturation for 6 months.
Aromas of red forest fruits and cherries. Subtle earthiness, and savoury notes, with cinnamon, cedar and milk chocolate from oak maturation. The palate displays cherries, red berries and chocolate oak characters, with natural fruit acidity, softening the ripe skin tannins, leaving a lengthy, silky finish.
