"Dauvissat's Séchet vines lie on deep soils, rich in seashells. Disarmingly drinkable already, this has a nicely integrated layer of subtle oak which adds further depth to the already concentrated palate. Could be enjoyed young but it would be best to allow this several years to fully blossom."

"The 2020 Chablis 1er Cru Séchet is brilliant, mingling aromas of crisp green apple and lemon oil with notions of oyster shell, freshly baked bread, white flowers and wet stones. Medium to full-bodied, ample and satiny, it's racy and tensile, with tangy acids and a long, searingly mineral finish."

Domaine Vincent Dauvissat is known for its exceptional Chablis wines, often considered among the best in the region. The winery is known for its traditional winemaking techniques, which emphasize minimal intervention and the expression of terroir.

The grapes are crushed whole-cluster to maintain natural pH levels, followed by fermentations in enamel-lined tanks and some barrels. The wine is then aged in 6-8 year old barrels. This barrel aging is crucial to their style, as it promotes ample oxygen exchange rather than aiming for reduction, allowing the wines to develop complexity.
